A new doughnut shop is coming to Germantown that serves custom-made mini-doughnuts. At Happy Glaze Donuts, each order is made fresh and served warm. Memphis Commercial Appeal
Jake Gaines wanted to open a doughnut shop since he was a kid. On Oct. 18, his dream comes true when Happy Glaze Donuts opens at 7781 Farmington Ave. in Germantown.
The new shop is a family affair as Jake opens the business with his in-laws, Tim and Krissy Johnson.
“My husband and I decided to open Happy Glaze Donuts after seeing similar concepts when traveling,” Krissy said. “There was nothing in Memphis like it.”
Jake was the first person the Johnsons called about their idea.
“I have always loved doughnuts and wanted to have a doughnut shop. It was a childhood dream I didn’t think would ever happen,” said Jake, who will be managing partner for the shop.
Since April, Happy Glaze has been tempting customers with a limited selection of doughnuts made fresh-to-order out of their food truck. “Since construction was taking so long, we decided to get a food truck,” Jake said.
Starting Oct. 18, the full line of offerings will be available at their permanent location.
“We will be celebrating our grand opening on Oct. 18 and 19 with giveaways, music and more,” Krissy said.

Happy Glaze Donuts is not a traditional doughnut shop. The shop will sell mini-donuts that are made to order. Each doughnut is about 1 to 1½ inches.
A special doughnut-making machine cooks a dozen doughnuts in less than one minute. Each order is served hot and glazed as soon as they come out of the doughnut machine.
There are a number of unique toppings — flavors like Fruity Pebbles, Oreo, coffee and lemon.
Krissy, the mastermind behind the flavors, created the recipes and their signature Happy Glaze cream cheese glaze. Cream cheese based with a hint of vanilla, the glaze is thinner than a traditional frosting and perfect for drizzling over the warm doughnuts.
When the shop opens, they will have about 14 flavors on the menu. “We also have seasonal flavors,” Krissy said.
One of the flavors Krissy said is a must try is S’mores. Warm doughnuts are topped with a chocolate glaze, marshmallow fluff glaze and crushed graham crackers. “Since it’s warm, it tastes just like a s’mores made over a campfire,” she said.
Jake said his favorite flavor is the Cinnamon Roll. The warm doughnuts are topped with the Happy Glaze cream cheese glaze and cinnamon sugar. “They are simple but quite tasty,” he said.
Doughnuts are sold by the box. Each portion has what Krissy describes as a “generous dozen.” Each box has one flavor and costs $5 (which includes tax).
Happy Glaze will also offer gluten-free doughnuts.
Coffee will be available from 901 Roasted, a Memphis coffee roaster run by Krissy’s brother, Andrew Banker.
The new shop
The interior of the shop was designed by Becca Gaines of B. Gaines Interior Design. As with Banker, Becca is also a relative. She is Jake’s wife and Krissy’s sister.
“Visually, the space is very eclectic,” Becca said. “There are beautifully tailored wood panels on the front of the prep counter, raw wood elements, raw concrete floors, vintage French bistro tables and funky mid-century modern lights.
“The design was about creating an atmosphere that is fresh and interesting, but also feels as though its been a part of Germantown forever,” she said.
The approximately 1,200-square-foot space will have seating indoors for 16 guests, as well as additional seating on an outdoor patio.
Although the physical location is opening, the food truck will remain a part of the business. It will pop up in various locations around the city, and will be available to book for weddings and events.
