Food Truck Friday: Fat Bottom Donuts –

GREATER LAFAYETTE, Ind. (WLFI)- Breakfast is, arguably, the best meal of the day. You can choose between sweet or savory dishes! However, this next food truck is all about the sugar. Sweet tooths, this one’s for you. 

Nate Kaelin was getting burned out from working long shifts. 

“I just wanted more time with my family,” Kaelin said. 

Having had enough of his work and home-life balance, he started thinking of ways to work without sacrificing time with his family.

“I wanted to do a barbecue [food] truck,” he said.  “I got to looking into it and it was going to take just as much time away from my family to do all that prep. So we started brainstorming and we just said; donuts.”

Nate and his wife got in the kitchen and started experimenting. Since they had never made the pastries before, it took quite a bit of experimenting to get the recipe right. 

“We had some real mutant looking donuts for about four weeks,” Kaelin said. “We just didn’t understand how the process worked of the yeast donut rising and when to proof it and when to get it out and when to put it in, when to freeze it.”

Once the recipe was figured out it was time to brand it.

“My son said ‘I want to name it,’ so I said okay.”

Kaelin’s then 13-year-old son came up with the name ‘Fat Bottom Donuts.’

“Everybody thinks we’re Queen fans, but he made the name up.”

Fat Bottom started serving donuts to the Greater Lafayette community in March of this year.

“I’ve eaten the cake donuts with the chocolate on them,” said Tippecanoe County Sheriff Bob Goldsmith. “I love those.”

The mobile donut shop serves traditional donuts, but they have one item on the menu that really stands out.

It’s called the cronut.

Kaelin describes a cronut as a croissant that’s deep-fried and covered with donut glaze. And people love it.

“He’s right, it is good,” said Goldsmith.

Kaelin makes good donuts on his truck, but he’s making even better memories with his family.

“Oh, it’s great,” Kaelin said. “When the kids are around we take them with us. It’s the best of both worlds.”
